Thanks for checking us out!  My name is John Martin.  I am a Connecticut native, raised in Tolland.

I have been working in the tree care industry since 1979, owning and operating a small tree service.  After forty years of wood chips and an increasingly sore back, I got an inspiration to bake.

​

I designed and built a rolling bakery on a tiny house trailer. Five years later, building during the slow tree seasons, construction is complete - inspections are done and I am ready to roll.

​

Ellie May's is all about a small menu, using the best ingredients (with no chemical additives) to create from scratch small batch cookies and seasonal delights.  All recipes have been tweaked, tried and tested multiple times.

We pride ourselves on meticulous attention to detail and quality.  Nothing will be served or packaged that is not the best it can be!

We promised to deliver a crispy, chewy, taste bud dancing, melt in your mouth, fresh baked product every time.
